This PR restructures the Mintlify docs as part of the migration from GitBook:
Unified product pages: each product now covers V1 (production) and V2 (next-gen) on a single page, no separate legacy section and no V1→V2 migration docs
New Tutorials section: juror guides (V1 and V2), escrow, curate, Scout, and Proof of Humanity (register & vouch, remove & challenge, profile transfer), with screenshots and infographic placeholders
New pages ported from GitBook: PNK token, Scout (earn, partnerships, MetaMask Snap + knowledge base), PoH 2.0 integration guide
Developers tab cleanup: dev-update changelogs rewritten as evergreen technical notes; V1 deployment addresses moved to the Reference tab
Enterprise & Ecosystem: enhanced with content from kleros.io, linked to the Notion knowledge base and ecosystem directory
Fixes: dead links repaired (Zodiac docs, moved contracts, IPFS gateways)
